Thanksgiving Wines

These past few weeks have seen us overwhelmed with requests about Thanksgiving wines. What to drink and what to have on hand for guests.
In honor of the many requests we have assembled a special Thanksgiving Wine Capsule Collection for your easy choice. These are the wines that we will enjoy for Thanksgiving ourselves.

The Collection consists of twelve wines grouped into a few types key to Thanksgiving which we will cover in the following paragraphs: Pinot Noir, Rosé, Chardonnay, and Champagne.

Pinot Noir pairs well with many foods. Two factors make up this flexible ability to pair: Naturally high acidity that cuts through fats in food and a light to mid weight that does not overpower lighter fare. A perfect pairing with fowl it also plays very well with the other Thanksgiving feast classics.

Rosé is a classic pairing with everything on the Thanksgiving table. Light and crisp on the palate so it does not tread on the amazing food; its laser focused bright acidity allows it to cut through just about anything this side of rib-eye. It refreshes the palate and leaves you anticipating the next bite/sip. (If you enjoy Rosé during the spring/summer you might want to stock up now. The greats are only available in a very short window, usually a month or so and they do not release until the middle/end of summer.) As a bonus we have a very rare white wine. We have the white wine of Domains Ott. Domains Ott is arguably one of the top three or so producers of Rosé in the world and their Cotes de Provence Blanc is a great wine from the region. This wine shares the key qualities of Rosé and fits much like Rosé when pairing. Every summer there is a mad rush to get this wine that typically does not release until August, do not make me say I told you so.

Chardonnay is a go to wine for many people in the world and is the most popular wine in America, believe it or not. Chardonnay can bring an amazing weight to the table for a white wine. We have selected two great Chardonnays, one from California and one from France. Both selected for their classic proportions. Weight balanced with the acidity required to keep them bright and food friendly on the palate, with a touch of oak that does

Champagne is the most flexible food pairing wine in existence. We drink it year around. At the Thanksgiving meal it enjoy as an aperitif, pair with the entire meal and enjoy with dessert and beyond. It pairs well based on the same factors mentioned earlier with respect to other wines selected. It has the added festive feeling bonus too. The three main varietals used in Champagne are Chardonnay, Pinot Noir, and Pinot Meunier (a cousin of Pinot Noir) so this makes a lot of sense.
